I have a few soups of this type I just can’t quit. They are usually a mix of some sort of potato, ground meat or sausage, and a hardy green. This one is probably the most decadent of the bunch. And the only one I indulge in when I am only cooking for me and my man, as it’s good and spicy. Spicy is not nice for the kid. Also, don’t be fooled, I don’t make my own broth, I buy boxes of the premade (organic) stuff, by the tons.
Also, side note- for this and any of the recipes I post that involve hardy greens- I often just get a bag of mixed “power” or “southern” greens (depending on the store), or when I am really on top of things whatever greens has arrived in my CSA box that week, and substitute it with that. It always works.
